HANDS, BAREFOOT AND SKINS

The grapes are harvested by hand in the second half of September. The grape-treading is done with barefoot. The must and the skin, stems and seeds are introduced together into the ceramic vessels.

Once covered, they are sealed with natural beeswax. The wine makes itself, without intervention. The buried vessels guarantee that the must during fermentation and the wine during aging, enjoy a low and constant temperature.
