FERMENTATION AND AGING IN CERAMICS

Alcoholic fermentation with wild yeasts. Ceramic is not opened and neither the grape cap nor the content is removed.

When it is opened, the wine is separated from the skins, the stems and the seeds, with the help of a sieve and the liquid is transferred to another buried ceramic vessel where the biological aging is carried out, under the protection of the veil flower (biofilm).

It is not pressed or filtered. No sulfites are added.
